Rock N Potato Certified underdog

Rock N Potato Certified underdog

I don’t know if I ever really shared with you what Certified Underdog means to me. It represents not only my story, but our company’s story too. We came onto the Las Vegas Strip as a small independent restaurant, going up against some of the biggest restaurant brands in the world. We didn’t have their money, resources or name recognition. We just believed we could compete by working harder, taking care of people and doing things differently. That’s what Certified Underdog represents—being overlooked, underestimated, and still believing you belong in the fight. And I know there are millions of people and small businesses with their own underdog story.

The Fleetwood MacDaddy — lobster mac, a whole lobster tail, loaded onto a massive baked potato — is just the headliner. Every item is built to earn a photo, a return visit, and a text to a friend.

In 2026, Yelp named Rock N Potato #23 on its Top 100 Places to Eat in America — the highest-ranked Las Vegas restaurant on the entire list. Not bad for a food court.

Edgar runs the operation tight as GM, Eric sets the tone up front — the whole crew operates less like coworkers and more like a band that actually likes each other.

Garland, Texas is next — the first stop on a longer tour. Rock N Potato is a movement now, and the Strip was just the first stage.
